Pinot Grigio

Typology: D.O.P.

Area of production: Friuli Isonzo

Terrain: Stony alluvial soil, poor in organic matter

Varieties: pinot grigio 100%

Production: 1 bottle per plant

Harvest: By hand

Notes: BIO

Vinification: After the harvest, the grapes are soft-crushed and the must-wine is transferred into stainless steel vats at 8°C/46 °F and allowed to settle. Following six hours of maceration, fermentation is started with inoculated yeasts and the wine is left on lees for two to three months. In the early spring following the harvest, the wine is filtered to obtain a homogeneous product for bottling.

Description: An excellent representation of our local terroir. The pinot grigio has a deep straw yellow color with copper hints. Complex and extremely perfumed, the wine shows the characteristic signs of pear, exotic fruit and acacia flowers. Long, persistent, and particularly refreshing.

Temperature & recommandation: This full-flavored pinot grigio should be served in a broad-rimmed white wine glass at a temperature of 12°C/53°F.
An excellent accompaniment to seafood risottos, fish soups, and other fish-based dishes. The wine also serves as a superb aperitif on it’s own.
