Terrain: Stony alluvial soil

Varieties: Cabernet Sauvignon, Cabernet Franc and Merlot in variable percentages

Production: 1 bottle per plant

Harvest: By hand

Notes: in organic conversion since 2019

Vinification: After the harvest, the grapes are destemmed and soft-crushed before undergoing maceration for about 15 days, depending on the vintage. Merlot, Cabernet Franc and Cabernet Sauvignon undergo fermentation during the skin contact period. The wine is then transferred into new French oak barrique, where it ages and matures for 24 months until the blending of the two wines.

Description: Intense ruby color with exuberant perfumes of fruit, wood, and blackberry. Also presenting underlining aromas of licorice and light tones of coffee. Warm and long in the mouth with interlacing softly balanced tannins.

Temperature & recommandation: Tato should be served at a temperature of 16-18°C/60-64°F in long-stemmed glasses for major red wines that will allow the complex aromas to emerge. Well-structured but moderately soft, Tato is an ideal companion for all red meat dishes and strong cheeses.
